Preheat the oven to 350°F (175°C). Soften the butter for about 10 seconds in the microwave; it should be partly melted but not liquid.
Stir in the brown sugar, then the egg yolk and vanilla.
Add the flour, cocoa powder, baking soda, and salt. Stir until combined, then fold in the chocolate chips.
Form the dough into 2 very large balls and roll them in granulated sugar.
Place on a baking sheet and bake for 10 minutes.
Leave the cookies on the pan for another 10 minutes to set before serving.
